- 6 tbsp finely ground almond flour (1.6oz/50g)
- 6 tbsp powdered erythritol (1.2oz/36g)
- 6 tbsp softened butter (3oz/85g)
- 1 tsp baking cacao powder/ dutch processed cacao powder/ raw unsweetened cacao powder
- 2 tsp buttermilk (10ml)
- 1 tsp sugar-free vanilla extract
- ½ tsp red food coloring
- Cream Cheese Frosting Ingredients:
- 4 tbsp full-fat cream cheese (2oz/60g)
- 2 tbsp powdered erythritol (0.4oz/12g)
- 1 tsp sugar-free vanilla extract
Instructions:
- Mix all of the ingredients for the red velvet bites in a large bowl until you get a smooth mass.
- Chill the mass in your fridge for approx. 20-30 min.
- While the mass is chilling in your fridge, prepare the cream cheese frosting by mixing all of the ingredients.
- Transfer the cream cheese frosting into a frosting bag.
- Take the mass out of your fridge and form small bite-sized balls with your hands.
- Add a bit of the cream cheese frosting on top of each red velvet bite!
