TREATS & SWEETS: CARAMEL FUDGE

CARAMEL FUDGE


Makes: 16 pieces

Ingredients:
½ cup butter and extra for greasing pan
1 cup brown sugar
¼ cup milk
¼ tsp vanilla
3¼ cups confectioners' sugar, sifted
½ cup chopped nuts (I really like pecans)

Instructions:
  1. Grease an 8-inch square pan and set aside.
  2. Place the butter in a 1-quart microwavable dish. Melt in the microwave.
  3. Add the brown sugar and mix well. Microwave for 2 minutes. It will be very hot so handle it carefully!
  4. Stir until it cools slightly and starts to thicken.
  5. Add the milk and vanilla and mix well.
  6. Add the powdered sugar and stir until well blended and there are no lumps.
  7. Mix in the nuts then spread into the prepared pan.
  8. Refrigerate for one hour before cutting into squares.
